Our farmers have wild ginger growing in abundance between the coffee and cacao trees which provides ground cover and reduce potential erosion problems. The ginger tubers that they wild-harvest are intensely aromatic and flavorful. They dry the ginger for 2 to 5 days under the sun for sale as fresh ginger and we also dehydrate and grind ginger into powder for sale as a spice.
